Why is my "total paid out" different from what I've earned?

The "total paid out" amount only includes rewards that have already been distributed to you. Rewards you’ve earned that are still being processed are not included.

Why is the USD value of my rewards different from market value?

The USD value of your rewards is calculated and fixed at the time of reward distribution. It will not be updated to reflect current market value.
